
How to actually speed up your baking line without burning the bread
Ever feel like your oven is the one thing holding back your entire production? You want more loaves coming off the line every minute, but you’ve hit a wall. If you just crank up the heat in a standard convection oven, you end up with a burnt crust and a raw center. It’s frustrating. That’s why we start bringing shortwave halogen IR lamps into the mix. The secret is how the heat moves. Standard heaters just warm up the air, which takes forever. Halogen lamps are different. They shoot radiation straight into the dough. Because we use quartz envelopes filled with halogen gas, these things hit their operating temperature in seconds. No more waiting for massive metal oven walls to warm up. It’s almost instant. Getting the specs right If you want to bump up your beats per minute, you need power. We usually go with high-wattage lamps tailored exactly to the width of your conveyor. And a small but huge detail: we use R7s or SK15 connectors. Why? Because production lines vibrate. A lot. You need a connection that actually stays put so you aren’t chasing electrical glitches in the middle of a shift. The “catch” (and how to handle it) Now, look—IR heat is aggressive. If you just slap these in and run them at max blast, you’re going to scorch your bread. You’ve got to find the sweet spot between how high the lamps sit and how fast the belt is moving. You also can’t ignore the housing. These lamps get hot—really hot. If you don’t get your cooling fans and vents sorted, you’ll fry your wiring and ruin your reflectors. But once you get that balance right? You’ll see the crust set much faster. That means you can kick the conveyor speed up a notch and finally move more product through the door every hour.
