Why the heat feels different We’ve tuned these lamps for a specific wattage-per-inch ratio. Why? Because you need a fast response. Think about when you open that oven door. Heat vanishes instantly. You need your oven to ramp back up now, not in five minutes. Plus, the ceramic material changes how the infrared heat hits your bread. Instead of just scorching the surface, the heat actually penetrates the dough. A few things to keep in mind Installing these is pretty straightforward. They’re designed to be drop-in replacements for your usual bakery arrays, and they wire right into your PID controller. But, there’s a catch. Ceramic is great with steam, but it’s brittle. If your oven frame shakes or shifts too much, the ceramic can crack. Just make sure your mounting brackets are tight and you aren’t putting any weird pressure on the ends of the tubes. One last tip: check your airflow. These lamps dump heat fast, so you want to make sure your cabinet is vented well enough that your wiring terminals don’t overheat.
