
Fixing those annoying cold spots in rotary ovens
Nobody likes it when half a batch of pastries comes out perfectly golden and the other half looks pale and underdone. It’s frustrating. To fix that, we use halogen infrared lamps. Most ovens rely on blowing hot air around, but that’s not always enough. These lamps are different. They send short-wave radiation straight into the food. It doesn’t wait for the air to heat up; it just hits the dough and gets to work.
Getting the heat everywhere
To make sure there are no “dead spots,” we arrange the halogen tubes in a specific pattern around the rotating rack. As the rack spins, your product basically swims through a field of heat. Since it’s coming from all angles, the tops and sides get treated exactly the same. You get that consistent, professional browning without having to pray that the airflow is hitting every corner.
What’s actually inside the lamps?
We make these with high-purity quartz glass and nichrome filaments. There’s a “halogen cycle” happening inside that keeps the filament from wearing out too fast, so the lamps actually last. Because these are for commercial kitchens, we use high wattages. You need that raw heat density to keep up with a busy morning rush. The quartz glass is the real hero here—it can handle the shock of jumping from cold to scorching hot without cracking. Plus, we use standard connectors. If a tube finally burns out, you just pop it out and slide a new one in. No need to call an electrician to rewire the whole bank.
A few things to keep in mind
Now, these lamps pack a punch. That massive heat is great for a perfect crust, but it does pull a lot of power. Just make sure your wiring is up to the task. If your electrical setup is weak, you’ll see voltage drops, and that kills your efficiency. And one more thing: these things gethot. Really hot. Make sure your oven is vented properly. If that heat just sits there, it can start eating away at your control panels and electronics over time. Keep the air moving, and your gear will stay happy.
