You want the heat to hit a specific number instantly, and then—the second the controller says “stop”—you want it to actually stop. Most heating elements just can’t do that. They’re too bulky. They hold onto heat for way too long, which is why so many pizzas end up with burnt bottoms and raw toppings. That’s why we use short-wave infrared (IR) lamps. Why this actually works Here’s the thing: standard elements have to heat up the air around them first. It’s slow. It lags. But IR lamps are different. They send energy straight into the dough and toppings using electromagnetic radiation. When you pair these with a PID controller, you can tweak the power in real-time. No more “burn out” where the oven keeps cooking even after the thermostat clicks off. You get a tight, reliable temperature window. It’s just cleaner. The guts of the lamp We make these out of high-purity quartz glass. Why? Because when you’re cycling heat on and off that fast, cheaper materials will just crack under the stress. We also add a halogen gas fill. This lets us push the tungsten filament to those crazy high temperatures without it evaporating and burning out in a week. A few tips for the engineers To get this working right, use fast-switching SSRs (Solid State Relays). Since the lamps react in milliseconds, the only real bottleneck is your sensor. Put your thermocouples as close to the cooking surface as possible. If you do that, you kill the “overshoot” that ruins a good crust. You get total control over the Maillard reaction—which is just a fancy way of saying you get that perfect, golden-brown char every single time.
